To Nurse or Not to Nurse

Who knew that would be a question for an adoptive mother? When I first heard that this was a possibility I thought it was a little weird. But the more I read about it, the more natural it seems. I was planning to nurse a biological child so why shouldn't I give my adopted child the same nutritional benefits? Also, they say that it helps for bonding with the child.

So I guess I could try it to see if I can produce something. Some adoptive mothers produce enough to sustain the child fully but most only produce a few ounces per day. Some don't produce anything. Well... guess I'm off to research!

First Visit

The first home study visit went well. She looked through our house and interviewed us for a while. At the end I asked her if there was anything that she noticed so far that would cause her not to recommend us for adoption. She said...... No! Yay! She said she would tell us now if it looked like we would be unfit to raise a child. Well that's a relief! Now we have to get our physicals, five references, and John has to have some other type of background check from Canada. After we've completed all of that she'll come back out for some more interviewing and hopefully she'll recommend us. She said she has to write a 10 page summary of our lives and present it to the judge. Our lives summarized into 1o pages! Do I have 10 pages worth of stuff to write about???

Side note: She laughed about how two middle children married each other. She said that doesn't happen often.

Hot, Hot, Hot

It's hot! Sweltering hot! Miserably hot! It has been 100 degrees every day for the past month! That's 38 degrees to you Canadians. Hot!

Adoption News: We have our first home visit tomorrow. I'm nervous but excited. Tristan has volley ball games at 8am, 10am and 12pm so John will be getting her just in time to meet the lady. But I'll be here cleaning and making some treats (Hubs told me I had to bake something so the house would smell good.)
I just want to take a minute to thank every one who has been praying and thinking about us. I was amazed when we were trying to conceive at the random emails, texts or calls from my wonderful friends and family just to let me know of some article, news clip or thoughts about infertility they thought I may find helpful. Or just to let me know they're thinking of us and love us. I'm even more amazed now that we've decided on adoption that nothing has changed. Today alone I received an email from my grandmother and some mouth watering cookies from Jaime G.

I can't believe I have been blessed with so many wonderful friends. It's difficult to find one or two true friends and I have about 10 amazing friends. Over the past four years these friends have gathered around me and lifted me up and they still continue to do so. I should strive to be as good of a friend as my girls are to me! So here's to all of my girls! I'm sorry I don't call, text or email as much as I should. Just know that I love you gals dearly!

Adoption News: Since the hubs (aka Cheapo McCheapyPants) pitched a fit when I said I was going to get a maid this week, we spent all day Sunday cleaning the house. It's still not how I would like for it to be for our first home study appointment. This is the first time she's seeing our house! It needs to be neat, tidy and CLEAN! White glove test clean! Alas, our current state of cleanliness will have to do. I do, however, plan to get up early Saturday morning to mop and vacuum again. Do I have any volunteers to help??? :)

Supper Club

It's that time again! We had supper club last night and, as usual, it was fabulous! We had couscous, Greek salad, and two different chicken breasts. One was stuffed with spinach and feta and the other was stuffed with olives and provolone. YUMMY. I actually remembered to snap a few pictures before I devoured all of the deliciousness.

Adoption News: I got my suitability letter! Woohoo! We're still waiting for the Hub's though. I guess his is delayed due to the fact that he's still a Canadian citizen. We also went ahead and scheduled our first home visit with the social worker for next Saturday. EEK. Time to start cleaning and making sure that we have all of the safety stuff in place.

80's Night

The hubs and I went to an 80's themed 30th birthday party last night. It was a rockin' good time!

I was trying to rock the big hair but it just wasn't working for me. This is as big as I could get it! My sister would be so disappointed.

John was a preppy boy. He's too cute!

Warning - My recipes are terrible because I don't measure anything! I am fully aware that this annoys some people and I apologize in advance. :)

Stuffed Jalapenos
6 Big jalapenos or 8 smaller ones
1/2 package cream cheese
2 cloves garlic - minced
Chives (maybe a 1/2 teaspoon or to taste)
1/4 cup shredded cheddar
1 tbsp sour cream
1 package thinly sliced prosciutto

1. Wash and cut the tops off of the jalapenos. You can either leave whole or cut in half length wise. I usually cut in half. Scoop out all of the ribbing and seeds. (Note: The jalapenos I grow seem to be a lot hotter than the ones I get at the store so reserve a little bit of the insides if you're using store bought and want them to be spicy.)
2. Mix together the softened cream cheese, sour cream, cheddar, minced garlic and chives. If you want your peppers spicier you can add a little bit of those reserved seeds and ribbing. You can also add a tbsp of juice from pickled jalapenos to loosen up the mixture a bit if you have a jar of those around.
3. Load those bad boys up with your mixture.
4. If you halved your jalapenos - Cut one slice of prosciutto into four strips and wrap one strip around each stuffed pepper.
5. Spray a pan with oil and place the wrapped peppers on it.
6. Cook for 15ish minutes (until they look done) at 375.

Dough: I use canned pizza dough but I hear the Publix ball dough is good.
Sauce: Combine 1/3ish jar Classico tomato basil marinara sauce, 1tbsp sugar (I like a sweeter pizza sauce), and some oregano (to taste) in a sauce pan and cook for 20ish minutes to reduce the sauce.
Toppings: Start by heating a saute pan and add 2 cloves of minced garlic and some oil... maybe 2 tbsp. Add sliced mushrooms, chopped onion, chopped peppers, chopped squash and zucchini. Saute for about 7-8ish minutes or until the veggies look close to done but still crisp.
Assemble the pizza: Spread the dough out on a pan and spread sauce. Lightly sprinkle with shredded cheese. Bake at 375 for 10 minutes then remove and all of your toppings. I also add black olives, prosciutto and chopped jalapenos. Lightly sprinkle with more cheese then cook for another 4-5 minutes. I bake at 375 because that's what the direction on the can of dough says. So follow the cooking directions of the dough. Also, all ovens are a little different so if yours runs a little hot or a little cool then you can adjust the temp accordingly.

Finaly - Kelly P sent the recipes for the stuffed peppers from Supper Club but they're on my work email so I'll post them next week. Luckily her directions are way better than mine!

I have been cooking up a storm the past few days!

Since I had the day off Friday I decided to make John one of his favorite meals... PIZZA! That man loves some pizza. But I wanted to make it a bit healthier since he's so crazy about what he eats these days. So I made what I call Veggie-Overload Pizza. It had squash, zucchini, olives, red peppers, jalapenos, mushrooms, and some prosciutto. (I guess it's not technically a veggie pizza due to the prosciutto but I still call it veggie.) It was so YUMMY!

Saturday I made stuffed jalapenos wrapped in prosciutto. I couldn't get a picture before the hubs gobbled them all up.

Finally, on Sunday, I decided to try out my pressure cooker. My mom got me this thing quite a few years ago and I've been too scared to use it. I thought it would blow up. Well, 4 potatoes and 7 minutes later our kitchen was still in tact. I'm converted to a pressure cooker lover!

World Series

Tristan's team made it to the World Series which took place this week. The series included 89 teams from all over the country! The hubs took off work Wed and Thurs to go down to Montgomery to see her play. It was about 482 degrees outside with a heat wave blanketing the south. The hubs said he felt like an early 1900's, southern bell, school girl carrying his umbrella to block out the sun. Haha. Even with carrying an umbrella he was still soaked with sweat. I don't know how those girls played out there in the sun! Maybe that's why they didn't perform the greatest in this tournament but at least they had fun trying!

Thankfully I'm off work today for my last CWW. I sure will miss these Friday's off even though I usually end up working at least a little bit from home. Still it's better than being at work 10 hours!

We don't have much planned for the weekend. We have some projects around the house and some cleaning. Yuck! If anybody wants to offer up something fun let us know!
