The Mountains

We took a family trip to the mountains this past weekend.  It was a full family trip... my parents, my brother, his wife, my sister, her husband, and Austin.  We had a great time!

Lil man started a new class yesterday.  They will start potty training him in this class.  He's getting to be such a big boy!  He's doing well in there so far and seems to like the teachers.  He LOVED one of his old teachers, Mrs. Ruby.  When John dropped him off in the mornings C would run in and hug her.  And when we say our prayers at night and tell everyone good night he says "night night Ruby."  Well... Mrs. Ruby retired on Friday (sniff, sniff) so I'm really glad they moved him up so he wouldn't ask for her all day in his old class.

I think poor lil man had an allergic reaction on Sunday.  He ate some pasta salad that had walnuts in it so I'm not sure if that caused it.  His class also had 5 kids out sick last Friday with hand, foot and mouth.  So maybe it could be that... but I haven't seen any pictures of hand, foot and mouth that look like this.

We were driving home from our new homesite when we noticed how bad he looked. He started having a shallow cough every few seconds.  It only lasted for about a minute but that was one LONG minute.  I was so scared that his tongue was swelling and he was having trouble breathing. I was plotting the driving route to the nearest hospital but then he stopped coughing and was all smiles.  His face cleared up by the next morning.  I guess we'll keep him away from walnuts until we figure out if they caused this terrible reaction.

Speaking of the house... we're slowly moving along.  We decided on a house and had two appointments to choose all of our options.  They were about to send off for the permits to start building when we freaked out and changed our minds to a totally different house.  Now we have to start all over again.  Hopefully they'll break ground in 3-4 weeks.  We've had 5 showings on our existing house.  We're getting some pretty good feedback but no offers yet.  I consider it a good thing since we won't be able to move into our new house until March(ish). 
He is such a little daredevil!  The more dangerous the better.  Poor mama!

Tristan had an unofficial visit with a college this week.  I can't believe she's already thinking about colleges!  This is such an exciting time for her and I pray that she'll make the right decisions.

What's for Dinner:  Man!  I haven't done a What's for Dinner in a long time!  That doesn't mean I haven't been cooking though.  I love the cookbook that Mom Z got me when she was here.  It's a cookbook for toddlers!  I have made tonight's selection twice and C gobbles them up!

Salmon patties
1 cooked salmon filet or two small cans (5oz) boneless/skinless salmon
1/4 cup of panko bread crumbs
1/2 cup of mashed potatoes or 1/4 of potato flakes
1/2 of a small zucchini shredded finely
2 tbsp. mayo
1 tbsp Dijon mustard
1 egg
1/8 tsp dried dill
1/8 tsp dried parsley
salt and pepper to taste
I also add a tbsp. of wheat germ b/c I cook with it a lot and have it on hand

Mix all ingredients together and work into some patties.  Heat a couple tbsp. of canola oil in a skillet set to medium heat and then drop in the patties.  Brown on both sides.  Once all patties are cooked squeeze 1/2 a lemon and serve.  I served mine with baked sweet potato fries. Yum!

The Zoo

We took C to the zoo this weekend.  It was the last weekend of the Dinosaur exhibit so we decided to take him.  That was not our smartest decision.  He was so scared of the big dinosaurs that were moving and roaring at him.  Poor thing.  He cried through the whole exhibit EXCEPT for this one spot where you could touch a small dinosaur.  He also had a great time on the train!  

Our Godson, James, turned one today!  Happy Birthday sweet boy!  He had his party on Monday and Christian got to jump in a bouncy house for the first time.  He loved it!

I love our time together while I'm rocking him every night.  We usually say a prayer and then he talks to me.  He usually says "Bye Bye Daddy" and  "Night night Lexi."  Neither Lexi nor John are in there so it's funny that he says that.  Then he may say "Yay" and clap or run through a list of words.  Then I'll shush him to sleep.  Now he starts shushing himself.  It's so sweet and I love him to the moon and back.
